I get asked quite often by friends and family for my favorite vegan recipes. I am forever sending everyone links to my favorite vegan recipes from around the web. Sometimes they just want ideas for meatless meals and others are interested in actually going vegan. Whatever the reason, I am happy to help.
When I started my journey towards veganism I started scouring the internet for tasty vegan meals that still sort of resembled food we were used to eating. Much to my surprise finding such recipes wasn’t as hard as I originally thought it would be. There are some fantastic home chefs out there!
The recipes that I am linking up to are ones that I have made SEVERAL times and are things my family asks me to make over and over. I figured if my family and friends enjoy these, yours probably will too!
Vegan Tuna Salad Sandwich from Full of Beans is amazing! I was a little nervous about this at first. I have great dislike of actual tuna salad, as a kid it was something I ate a lot of and never really liked. My hubby wanted try this vegan version so I made it and reluctantly tried it. To my surprise it is DELICIOUS definitely better than real tuna salad in my book.
Mexican Mushroom and Spinach Sandwich from Serious Eats is another favorite. It is a little time consuming to make but worth the bit of extra effort! Just be careful with the chipotle peppers in adobo if you are making these for kids. My first attempt at these were a bit too spicy for our younger two, so I cut the amount of chipotles in half. No complaints since then! Also, if you make these make the pickled red onions!
Chickpea Tikka Masala from Foodie with Family is delicious! I had never tried any type of tikka masala so I wasn’t sure what to expect. We were all pleasantly surprised with the outcome. The best part is that it is very simple to make and the ingredients are easy to keep on hand. I usually make this toward the end of the week when we have eaten most of the fresh veggies but I don’t want to run to the store yet.
Sweet Potato Blackbean Burgers from the Minimalist Baker. She is right, if you just need a burger fix this one will really hit the spot. These were pretty easy to make but being a super busy mom, I had to make it even simpler! Now when I plan to make these I make the potatoes and rice as side dishes for other meals earlier in the week and then use the leftovers for the burgers! Easy peasy.
1-Hour Vegan Pot Pies again from the Minimalist Baker. The kids BEG me to make this one…yes beg. They are really good with some Beyond Chicken pieces mixed in if you want some extra protien. Those biscuits on top are perfection. Need I say more?
Easy Vegan Falafel is yet again a nother amazing recipe from the Minimalist Baker! Honestly, every recipe I have ever tried from there has been super yummy so I am not surprised! These can be eaten as is, on a bun, or over a bed of greens (which is my personal favorite). You also MUST make the garlic dill sauce to go with it! I double this recipe for my family of 5.
Vegan Baked Beans in the Crockpot from The Vegan Bee goes great with the afore mentioned burgers. I was surprised that I didn’t miss the bacon in the beans.
Easy Red Beans and Rice from the FatFree Vegan Kitchen is crazy good. If you are looking for an authentic red beans and rice recipe that is healthy look no further! This one also makes for a great end of week, mostly pantry meal as well! It also makes quite a bit so you will have leftovers.
